Ingredients
- 1/2 cup polenta
- 1/4 cup coconut oil
- 1/2 tsp baking powder
- 1 cup of milk
- 1/2 tin peaches
- 2 tbs golden syrup
- 8 strawberries sliced
For the topping
- 3 strawberries halved
- 2 tbs strawberry jam
- icing sugar

Instructions
- Put all the ingredients except the fruit into a mixing bowl and stir.
- Line a tray with grease proof paper and pour the mixture in. With a spoon spread it all around. Then put on top of the mixture the peaches and the sliced strawberries.
- Bake at 160C for 15 minutes.
- Remove from the oven, wait for one minute and whilst still quite warm roll the paper over slowly an inch at a time, and push down and peel back the paper as you go to form the roll.
- Once rolled, sieve on the icing sugar. Then heat the strawberry jam in a pan until liquid. Pour over the roll, and place the halves of strawberries on top.
