Ingredients

Instructions
Cream together the butter and the sugar and beat in the egg yolks.
Add the treacle, bicarbonate of soda and the milk, the sifted flour, salt, mixed spice, ground ginger and the raisins and mix well.
In a separate bowl, whisk the egg whites until stiff, then lightly fold into the mixture.
Transfer the mixture into a greased lined oblong 12 inch tin. Bake for 50 minutes at gas mark 4 or 180C.
Allow to cool and cut into squares to serve.
