Ingredients
- 120 g butter
- 120 g demerara sugar
- 2 eggs
- 225 g black treacle
- ½ tsp bicarbonate of soda
- 2 tbs milk
- 225 g plain flour
- Pinch of salt
- ½ tsp mixed spice
- 1 tsp ground ginger
- 175 g raisins

Instructions
- Cream together the butter and the sugar and beat in the egg yolks.
- Add the treacle, bicarbonate of soda and the milk, the sifted flour, salt, mixed spice, ground ginger and the raisins and mix well.
- In a separate bowl, whisk the egg whites until stiff, then lightly fold into the mixture.
- Transfer the mixture into a greased lined oblong 12 inch tin. Bake for 50 minutes at gas mark 4 or 180C.
- Allow to cool and cut into squares to serve.
